Ham Storage

Initial Storage

Ole Smoky General Store Brand Tennessee Hams can be stored for several months just as is. You should hang it up and protect it from flys and other insects. Do not wrap the ham in plastic or lay it on concrete or a shelf. It should not be subjected to extremely high temperatures (above 100 degrees).

Storage After Slicing

Many of our customers take their hams to the local market and have it sliced. Slices will keep for two or three weeks in the refridgerator without losing their flavor.

We recommend that an appropriate number of slices be wrapped in aluminum foil and placed in the freezer. It will retain its savory goodness in this frozen condition for up to three months.


Mold

Mold is a very common characteristic with real country hams, just as it is with cheese. Just brush, wash or trim away the mold; it does not damange the ham.

How to Cook Your Ham

Fried Ham

Many of our customers like their hams sliced about 1/4 thick for frying. Nothing beats a well-seasoned, iron skillet for frying good ham and making "redeye" gravy. Ham should be fried very slowly on low temperature (350 degrees). Do not over cook or the ham will become tough.

Boiled Ham

Wash thoroughly and soak overnight in cold water. Put ham in uncovered container and add fresh water, covering the ham. Slowly bring to a rolling boil. Boil for 10 minutes and then remove from heat. Cover with a lid and insulate well. Most folks insulate with several layers of newspaper, old quilts and then more news papers on top of that. Wait 18 to 24 hours, then remove the ham from the water. Remove the skin and bones. Tie the ham with a cord where the bone was removed. Trim fat, score and apply your favorite glaze. Bake at 375 degrees for approximately 30 minutes or until golden brown. Your ham is ready to eat.
