We take great pride in the fine quality of our hams. Our folks down in
Madisonvillle use the old-time process -sugar, salt, and other curing spices -and salt
them down on maple boards like the old country smokehouse. Each ham is rubbed more than
once with the curing formula. It takes a lot of patience and requires about
six to eight
months to produce a real quality country ham. The secret is in having just the right
amount of salt and curing spices and then waiting for nature to do the curing. We
think we have the perfect balance.
If handled properly, our ham and bacon products keep without
refrigeration for several months.
